Shalgam ka saag/ Turnip saag

Before the turnips say goodbye this season I want to share this absolutely delicious and healthy dish made with turnips, we call it Shalgam kaa saag. This is quite common in North India and mostly made in winters. I don't remember if I've hated any vegetable since childhood. Although I used to dislike some but would eat them without being fussy. But it's completely a different story when it comes to saags that are usually made in winters. I have always loved them and still do. You can easily impress me with a good homemade saag be it Sarson ka saag, Shalgam ka saag, Bathua saag, cholayi( amaranth leaves saag). I love all of these.

Pressure cook the turnips with 1 cup water till 3-4 whistles. Then let the pressure release naturally and open the lid. Thereafter strain all the extra water and mash the turnips with a potato masher.

Now heat ghee in a pan or kadhai and add jeera, let it crackle. Then add ginger, green chilli and onions. Saute till the onions become translucent. Then add tomatoes and saute for a couple of minutes.

Furthermore add all the dry spices and saute. Add the boiled turnips.

Mix well,add the jaggery powder and let it simmer on a low flame for a few minutes. Garnish it with fresh coriander leaves and serve hot with Paranthas or phulkas.
