To begin with soak rice in water for 2-3 hours.

Then drain the water and blend the rice to a course paste. Keep it aside.

Now boil the milk in a deep pan on a low flame. Add sugar and stir for a while or till sugar is completely dissolved.

Then add in the prepared course rice paste with a pinch of salt. Stir continuously for 4-5 minutes. Else, lumps might form. Allow it to cook on a low flame till the rice is completely cooked.

Next add milkmaid and mix it well. Once the milk gets thickened and creamy, remove from the flame.

Heat ghee in a pan. Add the dry fruits and saute till golden brown.

Transfer these fried dry fruits to the rice-milk mix. Add cardamom powder and mix well.

Pour the rice-milk mix (phirni) into the earthen cups and refrigerate for a few hours.

Serve the phirni chilled.
