Without Bread Sweet Sandwich

I decided to give the sandwich a new twist. We always make sandwiches using bread that are made using white flour or wheat. Suran or Jimikand is the high carbohydrate, protein, vitamins, antioxidants, minerals, dietary fibers and calorie rich vegetable. Garlic and ginger are two commonly used kitchen herbs that possess many little-known therapeutic and health benefits. They are natural herbs that have been used in Ayurveda for centuries. Ginger garlic paste combines two of nature's most powerful healers. These anti-inflammatory herbs reduce migraine severity and pain and inflammation in the muscles and teeth. They lower blood pressure, help in digestion, treat digestive disorders, clear up phlegm, reduce blood clotting, and prevent cancer. Grated coconut helps in giving a nice texture to the stuffing and also enhances the taste. So considering all these health benefits, I decided to combine them and make this healthy sandwich without using bread.

Remove the tamarind pulp from suran slices using hand. Melt 1 tbsp vanaspati ghee in a pan. Place the suran slices in the pan.

Cover with a lid & let them cook from both the sides. Remove from flame & allow them to cool.

Melt 2 tbsp sugar in a pan. Add a pinch of salt, place the suran slices & allow them to caramelize from both the sides. Once caramelized, remove on butter paper or plastic paper to avoid them from sticking.

For the stuffing, melt 1 tbsp vanapati ghee in a pan. Add 2 tbsp jaggery and let it melt. Add 1 tbsp ginger garlic paste, 1 tbsp khuskhus & mix well.

Then add 2 tbsp grated coconut, 5-6 black peppercorns, 1 stick of cinnamon, 1 tbsp sugar, 1 tbsp water and a pinch of salt. Then mix well & let it cook till the mixture is dry. Remove from flame and let it cool. Once cooled remove the peppercorns and cinnamon from the mixture.

Place the caramelized suran in a plate and spread some butter over it. Spread the ginger-garlic-coconut stuffing over it. Then spread some almond flakes.

Cover with another buttered suran slice and cut from the center in another bowl mix 2 tbsp fresh cream, 2 tbsp jaggery & serve this dip along with the sandwich.
