Ingredients

  1. As much of the Jamaican jerk spice rub as needed (see my recipe)
  2. 4-6bone-in chicken breasts or legs

Steps

  1. 1

    Rub the spice mixture into the chicken, coating all over

  2. 2

    Chill in the refrigerator overnight.

  3. 3

    Preheat the oven to 190°C

  4. 4

    Place the chicken on a rack in a roasting tin and roast for 30 to 40 minutes until well done and no longer pink on the inside

  5. 5

    Serve at once garnish with fresh thyme, chillers and lime wedges
