Make a marinade using olive oil, soy sauce, honey, 1tbs thyme leaves, the juice and zest of 1 lemon.

Cut the steak into stripes of considerable size. Put in the marinade and make sure to coat the meat completely. Let rest between 20m and 4h.

Remove the meat from the marinade and season with salt and pepper. In a cast iron pan, over medium heat, add some olive oil. When hot, place steak and cook until seared. Add then the butter, the garlic, the thyme, lemon juice and zest. Let cook for a few minutes, then remove the meat, setting the sauce aside.

In a clean pan, add some sauce. If needed, add a touch more butter. Place spinach until ready, making sure the vegetable has contact with the sauce.
