Ingredients

  • 2Large Sweet Potatoes
  • 5Carrots
  • 1 litreStock
  • 1Garlic Clove
  • 1Onion

Steps

  1. 1

    Peel and chop the vegetables. Soften the onion and garlic in butter.

  2. 2

    Add the carrots and sweet potatoes and sweat them for a few minutes before adding enough stock to cover.

  3. 3

    Simmer for 30 minutes on a low heat or until the carrots are soft, then season to taste.
