Trim fat from chicken breasts and cut lengthwise into 2 pieces. Cut each piece horizontally in the middle to make 4 thin slices of chicken.

Rub the chicken with vinegar and set aside for 2 minutes, then wash with water.

In a bowl, mix the breadcrumbs and all the spices: salt, black pepper, Italian seasoning, paprika, oregano and red pepper.

In another bowl, beat the egg with a fork.

Dip each chicken slice with egg mixture, then with breadcrumb mixture. Press chicken in breadcrumbs until it's all well coated. Set aside on a plate.

Repeat process with the rest of the chicken slices.

Heat oil, lower to medium and fry the chicken slices.

Plate each chicken breast slice in a plate, place 1 slice of cheddar on each.

Heat the pizza sauce and pour over the chicken and cheese.

Garnish with Basil springs and serve serve.
