Poached Egg with Avocado

Lightly toast the slices of bread.

Scoop out the avocado flesh with a teaspoon and season it with lemon juice and a little olive oil.

Take a small pot, fill it two-thirds with water and a bit of vinegar, and bring to a boil.

Prepare the egg by cracking it into a small cup.

When the water boils, create a whirlpool in the center using a wooden spoon, stirring steadily.

Gently slide the egg into the center of the whirlpool as you lift the spoon.

Lower the heat slightly and let it simmer for 2 to 3 minutes.

Place the egg on a slice of bread topped with the mashed avocado, seasoned with a little salt and a pinch of pepper.
