Chop the vegetables and cook them in boiling salted water for about 30 minutes. Use all the vegetables listed or just the ones you have or prefer.

You can prepare this two ways: boil as above, or steam the vegetables, then poach one egg per person in the broth and serve the vegetables with the broth.

You can also add a few pieces of soaked, drained cod.

Serve hot with a drizzle of olive oil.
