Ingredients

15 -20 minutes
4 person
  • For Adai Dosa batter:-
  • 2 cupRice
  • 1/4 cupChana dal
  • 1/4 cupArhar dal
  • 1/4 cupwhole Moong dal
  • 1/4 cupUrad dal
  • 1 inchGinger
  • 1-2green chillies
  • 1/4 TspHing
  • 2Chopped onion 1 medium size
  • 1/4 cupfresh coriander leaves chopped
  • Salt as per taste
  • Water as required for preparing batter
  • as neededOil/ghee as required for preparing dosa

Steps

15 -20 minutes
  1. 1

    Add all the pulses(1/4 cup whole moond dal,1/4 cup arhar,1/4 cup chana dal,1/4 cup urad dal) in a big bowl and wash for 3-4 times under tap water.

    Add enough water in a bowl and soak pulses for 3-4 hrs or overnight.

  3. 3

    Take another big bowl add 2 cups of rice and wash under tap water for 3-4 times.

  4. 4

    Soak washed rice in enough water for 3-4hrs or you can leave overnight.(I prefer to keep pulses and rice soaked overnight)

  5. 5

    Next day drain the water from pulses and rice and keep both in separate bowl

  6. 6

    In a mixer jar add green chilies and rice.Add 2-3Tbsp of water and blend into slightly coarse thick batter.

    Transfer the prepared rice batter in a big bowl.

  8. 8

    Next add drained pulses and peeled ginger in a same mixer jar.

  9. 9

    Blend the pulses to slightly coarse batter if required add 2-3 tbsp of water while grinding.

  10. 10

    Transfer pulses batter to rice batter bowl and mix both the batter well.

  11. 11

    Dosa batter is ready to use.(If you want you can rest better for 2-3 hrs.)

    Heat a non-stick tawa over medium heat and apply 1Tsp of oil.

  13. 13

    Add 1 medium size chopped onion,salt to taste,1/4tsp hing,1/4 cup chopped coriander leaves to dosa batter and mix everything well.

    Dosa batter is thick,but of spreading consistency.

  15. 15

    Make sure your tawa is hot, before you pour batter.

  16. 16

    Lower the heat,pour a ladle of batter and spread it quickly like dosa.Spread thick or thin as you prefer to eat.

    After spreading batter,increase the heat to medium.

  18. 18

    Add 1/2 tsp of oil /ghee around the edges of dosa and cook on medium heat.

  19. 19

    When dosa cooks on one side,the edges loosen from the tawa slightly.

  20. 20

    Flip and cook on other side,cook from both sides until it turns crispy.

  21. 21

    Serve adai dosa hot with tomato or coconut chutney or with the choice of your chutney.
