  1. No. 2 short pasta noodles (fideos)
  2. 1cut-up cuttlefish
  3. About 2 1/2 cups (1 brick, 1 liter) seafood broth for fideuá (or homemade seafood stock)
  4. 12shrimp
  5. 10-15clams
  6. Olive oil
  7. Salt

    Here are the ingredients:

    Toast the noodles over low heat, then set aside.

    Peel the shrimp.

    Sauté the shrimp in olive oil, then remove them from the pan.

    Sauté the clams (after soaking them in salted water for at least 30 minutes to remove any sand) until they open.

    Once the clams open, remove them from the pan.

    Set aside the shrimp and clams.

    Finally, sauté the cut-up cuttlefish.

    Add the toasted noodles to the paella pan. Turn on the oven broiler.

    Add a little more than half of the broth (about 1 1/2 cups or 600 ml) and bring to a boil.

    Let it cook for the recommended time. For No. 2 noodles, cook for 10-13 minutes.

    Prepare the aioli (eggs, garlic, sunflower oil, extra virgin olive oil, a pinch of salt, and a blender).

    After 13 minutes, bake for 5 minutes at 350°F (180°C) WITHOUT the clams. Add the clams after taking the fideuá out of the oven.

    No. 0 noodles: 2 cups (300 grams), 5 minutes.
    No. 2 noodles: 1 1/3 cups (200 grams), 10-13 minutes.
    Thick noodles: 1 1/3 cups (200 grams), 15 minutes.
    This is for 4 servings. I make it for two people with almost a whole 8.8 oz (250 gram) package of noodles and a little more than half the broth.
