Firstly cook matta rice. This rice requires more water and time to cook then normal rice.

After the rice is cooked, it will double in size. Strain it and keep aside.

Now in a kadhai take oil. Heat on medium flame.

When mustard starts to splutter add curry leaves, dry red chillies and asafoetida. Saute for 30 seconds.

Now add chana dal and cashew nut. Saute till they turn lightly golden brown.

Time to add raw mangoes, turmeric and salt. Cook till the mangoes turn soft.

Once mangoes are done add rice into this and mix very well.

Cover and cook for 2 minutes and then add fresh coriander leaves. Yummy hot Mangoe Matta Rice is ready. Serve hot with choice of pickle.
