In a bowl, take urad dal, wash it with running water and soak the dal for 5-6 hrs. In a grinder, add soaked urad dal, green chillies, ginger, salt and sugar, also add little water and make a fine paste.

In a mixing bowl, take all purpose flour, carom seeds, rava, salt, sugar, and 2tbls oil, mix all the ingredients with the flour. Add lukewarm water and make a dough. And keep it aside for 20minutes.

For bhaja masala- dry roast cumin seeds, coriander seeds, fennel seeds and dry red chilli, let them cool and make a fine powder.

In a pan heat some oil, add fennel seeds and hing. Then add urad dal paste. Cook it on low flame. Add 1 tspn bhaja masala powder. Stir it continuesly to avoid sticking to pan. After 5 minutes stuffing is ready, let it cool.

Now take the dough, and divide the dough into 10 balls. Take a dough ball, press the edges. Give it a shape like bowl. Place the stuffing in the center. Bring all the edges together and close it.

Gently roll the Puri with a rooling pin. In a deep pan heat some oil, and fry the poori on high-medium heat. Serve it hot with aloor torkari.
