Ingredients

90 minutes
1 round mold
  1. 2/3 cuprice flour (80 grams)
  2. 1/2 cuptapioca starch (60 grams)
  3. 1/4 cupgranulated sugar (50 grams)
  4. 1 1/4 cupswater, settled with lime (300 ml)
  5. 3/4 cupcoconut milk (200 ml)
  6. A fewpandan leaves
  7. 3 1/2 ouncespalm sugar (100 grams)
  8. Toasted sesame seeds
  9. Toasted peanuts
  10. A fewdrops of pandan extract

    Wash the pandan leaves, chop them, then blend with the settled lime water. Strain to get the juice and discard the pulp.

  2. 2

    Mix the rice flour and tapioca starch with the coconut milk, then stir in the granulated sugar until dissolved. Strain the mixture for a smooth batter. Add a few drops of green pandan extract for a vibrant color.

  3. 3

    Place the mixture on the stove and stir constantly until it thickens and becomes heavy to stir. Remove from heat and continue stirring until the mixture is smooth.

    Grease a round mold with oil, pour in the batter, and steam for about 35 minutes.

  5. 5

    Cook the palm sugar with a little water. Then add a bit of diluted tapioca starch to thicken. Remove from heat.

  6. 6

    Once the cake is cooked, let it cool completely before removing from the mold and cutting.

  7. 7

    Cut the cake into bite-sized pieces, drizzle with the palm sugar syrup, and sprinkle with toasted sesame seeds or peanuts on top.
