In a mixing bowl add the flour, sugar, mixed spice raisins, baking powder and a pinch of salt. Cut the lard and butter into small cubes. Add to the mix and using your fingers rub together until a crumbly dry mixture.

Put onto a floured surface and roll out to about half an inch thick cut into 2 inch circles I used the top of a large glass

Using a non- stick flat bottomed pan on a low heat add the circles of mixture and cook slowly each side until they start to Brown

Once cooked put them on a cooling rack, dust with icing sugar and enjoy when cold. I managed to make about 10 Welsh cakes with the above mixture
