A delicious semi-fresh, I used canned tomatoes. Next time I try will diced fresh vine ripened tomatoes.
Cooking Instructions

Remove the corn off the cob. Slice the zucchini and squash. Add the corn to a hot skillet sprayed with nonstick spray. Sauté for 7 minutes

Add onion to the corn. Stir it in and cover for 7 minutes.

Add the zucchini and squash and mix in with salt and half the pepper. Sauté 10 minutes.

Add the tomatoes and remaining pepper. Mix in and cover simmering for 20 minutes.

It's ready. Serve I hope you enjoy!
