Ingredients

  1. 1/4 cuphoisin sauce
  2. 2 tbspreduced-sodium soy sauce, plus more for serving (optional)
  3. 1 tbsprice wine vinegar
  4. 2 tspsesame oil
  5. 1 tspsriacha
  6. 1large bok choy, cut into 3-inch pieces
  7. 2sweet red peppers, seeded and cut into 1/2-inch strips
  8. 1 lbsmall shiitake mushrooms, stems removed
  9. 2 tbspcanola oil
  10. 1-1/2 lbsjumbo shrimp, peeled & deveined
  11. 2 tsptoasted sesame seeds
  12. chopped scallions (optional)

    Heat oven to 450. Line a 13x9-inch rimmed sheet pan w/ nonstick foil. In a small bowl, combine housing, soy sauce, vinegar, sesame oil, and sriracha. Set aside. Place bok choy, peppers, and shiitakes on prepared sheet pan. Combine 3 tbsp of the hoisin mixture with canola oil. Pour over vegetables and toss to coat. Toss shrimp with remaining hoisin mixture. Place shrimp over vegetables. Roast at 450 for 20 minutes. Garnish with sesame seeds and, if using, scallions. Serve with additional soy sauce if desired.
