Ingredients

  • 3 Stalkslemongrass, roughly chopped
  • 4 Clovesgarlic, roughly chopped
  • 3-4 Inchsection of ginger
  • Quartchicken stock
  • 3 Lb.chicken cubed
  • 1Red onion sliced
  • Juice of 2 limes
  • 1/3 Bunchcilantro
  • 2 Canscoconut milk
  • 2-6 Tbsp.Red curry paste
  • 3 Tbspfish sauce. Adjust when done to taste
  • 3Kaffir lime leave, de-stemmed and chopped small

Steps

  1. 1

    Rough chop the lemon grass, garlic and ginger.

  2. 2

    In a sauce pan combine the chicken stock, lemongrass, garlic and ginger. Simmer for around 30 minutes.

  3. 3

    While simmering the broth, chop the chicken into small cubes. Cook the chicken in a large skillet until the chicken turns opaque.

  4. 4

    Add the curry paste and the lime leaves to the chicken. Cook until it is aromatic.

  5. 5

    Add the lime juice and fish sauce to the chicken. Mix well. *the fish sauce is your salt.

  6. 6

    Strain the stock and add it to the chicken.

  7. 7

    Add 2 cans of coconut milk.

  8. 8

    Simmer 15 minutes.

  9. 9

    Add the sliced onion and simmer until the onions are soft.

  10. 10

    Add the cilantro and serve.

  11. 11

    Can be served over rice or eaten as soup.

I am a 42 year old diabetic that was told by the doctors that I needed to go on insulin. I refused and have been keeping my blood glucose under control with diet. I will try to keep adding recipes but I don't measure and constantly experiment to find good flavor with no grains and sugar, so it may take me a while before I write a recipe with measurements and pictures.
