Ingredients

4 persons
  1. 400 gTarakihi fillet (whatever firm fish fillet: White Snapper)
  2. Rub fish with salt and 1/2 lemon juice. Marinade for 10:
  3. 1 cupplain Flour
  4. 1 tbsTeriyaki Soy Sauce
  5. 2 tbsRice Bran Oil for deepfry +1 tbs for the sweet n sour Sauce
  6. For the Sweet n Sour Sauce
  7. 2 tbsred onion, chopped finely
  8. 1/2 tspgarlic paste
  9. 1/2 tspginger paste
  10. 2fresh red chili, deseeded and slice finely
  11. 4fresh yellow tomatoes (small rounded shape), chopped roughly
  12. 14red Capsicum, chopped roughly
  13. 1Spring onion, green part only, diced
  14. Salt
  15. 1/2tsb soft brown sugar
  16. 1 tbslemon juice or 2 tsp Rice vinegar
  17. 1 1/2 cupsLong Grain Jasmine Rice cook in Rice Cooker

Steps

    Wash the fish. Prepare for the marinade. Marinade for 10' covered, then put in the fridge. Afterwards, take it out from the fridge. Coat in flour, shake the excessive flour off. Cook the Rice in Rice Cooker.

    Then fried the fish in a wok with hot oil, fry until just turn golden brown on both sides,not over fry them then splash over with 1 tbs Teriyaki sauce on both side then continue stir fry for 1', quickly then lifting them out with a large spatula at this point it will break easily. Put into a large serving platter.

    Preparation for the Sauce. In a wok put 2 tbs oil, warm the oil. Add the garlic and ginger paste, 2 red chillies, tomato pieces, stir-fry for 2 then add the red Capsicum, the Spring onion, 1/2 tbs soft brown sugar & 1 tbs lemon juice/vinegar and mix with a spoon. Stir-fry for another 2', taste the season and sugar, then then turn off the heat, lift out put into a serving bowl.

    To serve: the Fried fish with side dish Sweet n Sour sauce on bed of steamed rice 😍 Happy Cooking

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
