Ingredients

  1. 14 ouncesgolden lentils
  2. 1 cupwhite corn removed from the cob
  3. 2 stalkscelery
  4. 1large onion
  5. 1 quartchicken broth
  6. 1 pintbeef broth
  7. 1 poundsmoked sausage
  8. 1/2 poundkale
  9. 1 stickbutter
  10. 2large carrots
  11. 6fileťs of anchovies packed in olive oil
  12. 1pinch, big, of dried thyme
  13. To tastesalt
  14. To tasteground black pepper
  15. 2 clovesgarlic sliced thinly
  16. 2 tablespoonswhole grain mustard
  17. As neededwater
  18. To tastecheddar cheese optional

Cooking Instructions

    Remove the casing and slice the sausage into bite sized pieces.

  2. 2

    Remove the corn from the cob. Peel and slice the carrots. Slice the garlic. Thinly slice and chop the onion. Chop the kale. Wash and chop the kale.

    Add the butter to a pot and melt. Add the onions, spices, celery, carrots, and garlic. Sauté till the onions are translucent. Mash the anchovies and add with rest of the vegetables, and sausage.

    Sauté everything for 10 minutes add the thyme, broths, whole grain mustard, and lentils simmer till lentils are cooked and tender.

    Adding mustard. After cooking covered for 30 minutes check liquid levels and add water or more broth if needed. I added about 1-1/2 cups.

    Serve, with cheese. I hope you enjoy!!
