Ingredients

  • 10 grambaby spinach
  • 3/4yellow capsicum, sliced
  • 3/4green capsicum, sliced
  • 3/4red capsicum,sliced
  • 100 grambeensprout, tailed, blanched, drained
  • 100 gramstring bean cut into 2 cm lengths
  • 2hard boiled eggs, sliced
  • For the peanut sauce
  • 200 grampeanuts, fried, skin removed, ground
  • 3red chillies, ground
  • 5bird's eye chillies, ground
  • 1 teaspoonsalt, ground
  • 1/2 tablespoonbrown sugar
  • 200 ccwater

Steps

  1. 1

    For the peanuts sauce : Mix the sauce Ingrediants and bring to the boil.

  2. 2

    Pour peanut sauce over vegetables, fried been curd in a bowl.

  3. 3

    Garnish with eggs slices.
