Ingredients

  1. Forspinach puree :-
  2. 3/4 cupSpinach
  3. to tasteGreen chillies
  4. to tasteSalt
  5. 1/2 teaspoonRoasted cumin powder
  6. 1 teaspoonCoriander powder
  7. 1/2 teaspoonTurmeric
  8. 1 teaspoonGaram masala
  9. 1 teaspoonGinger garlic paste
  10. a pinch (optional)Sugar
  11. as requiredWater to blanch spinach
  12. Other ingredients-
  13. 2 cupsDosa batter
  14. as requiredOil or ghee or butter to roast
  15. 150 gmsGrated cheese
  16. For green chutney-
  17. 1.5 cupPeanuts / Moongphali
  18. 8Whole Green red chilies
  19. to tasteSalt / Namak
  20. 1.5 inchGinger / Adrak
  21. 1/2 cupkothmir
  22. For white chutney-
  23. 1/2 cuppeanuts
  24. 1small garlic clove
  25. 1-2green chilies or red chilis (adjust as needed)
  26. 1/4 teaspoonsalt as needed
  27. 1/2 teaspooncumin or jeera
  28. Fortadka of chutney-
  29. 1 teaspoonoil
  30. 1/4 teaspoonmustard
  31. 1red chilli broken
  32. 1 pinchhing or asafoetida
  33. 1small garlic crushed
  34. 1 sprigcurry leaves

Steps

  1. 1

    In a bowl take water and boil them. Add spinach to the boiling water and cook for 4-5 minutes until spinach is soft. Blanch the spinach and transfer the spinach to icecold water to retain the green colour of spinach. Squeeze the water from cooked spinach and take into the mixer jar with all the other ingredients in the puree ingredients.

    Grind the ingredients to a puree and transfer to a bowl. Heat a tava and pour a ladle full of dosa batter and spread as thin as possible.

    Add a generous amount of ground spinach puree and spread on the dosa. Add a teaspoon of ghee to the dosa. Sprinkle a generous amount of grated cheese on the dosa.

    Roast the dosa until it is golden brown at the bottom. Palak paneer dosa is ready to serve with a side peanut chutney or any other chutney as you like.

    For green chutney: Grind together roasted peanuts, kothmir, green chillies, salt and adrak. Make fine paste.

    For white chutney: Grind together roasted peanuts,cloves, salt, red chillies and jeera. Make fine paste.

    Now give tadka to both the chutney by heating oil in tadka pan, add mustard, garlic, red chillies, and hing. Also add salt to taste. Now serve hot spinach cheese dosa with the chutney.
