In a pot put the water n set on fire n bring to a rolling boil. Preheat your oven to 180 and prepare a pan line with aluminum foil.

Wash your potatoes well with skin on to remove dirt. Halve then quarter add to the boiling water n simmer 5 mins. Remove from the water and pass through a cold bath to stop the cooking. Let them cool abit

In a large bowl combine the spices,herbs and salt. Add the wedges into the bowl and toss to coat the potatoes.

Arrange in the baking sheet and brush the oil on top bake for 30 mins turn the potatoes and bake for another 20-30 mins depending on how crispy you want.

Garnish with Onion's serve and enjoy with your favorite dip n salad
