Wash spinach properly then put it in a pan with 2-3 cups of water and blanch for 3-4 mins on medium flame. After it's done strain it in a stainer and make a smooth paste of it in a blender.

In a mixing bowl add all ingredients of dough along with spinach paste and knead it into a smooth dough. Add water if required. Cover it and let it rest for 10 mins.

Wash the dal properly and keep it socked for 4 hrs. At time of preparation add dal, water(1.5 quantity of dal), a pinch of salt, turmeric powder and chilli powder into a pressure cooker and cook until 3 whistles (don’t make it mashy and if it's too watery stain out extra water).

In a pan heat the oil, add jeera and let it crackle. Then add chopped ginger, garlic, green chillies and cook until raw smell is gone. Add onions, a pinch of salt, hing and cook till it's translucent. After that add all the spices, stir a little (don’t let the spices burn). Finally add cooked dal and give it a good mix. Switch off the flame, add chopped coriander and mix. Let the stuffing cool under room temperature.

For paratha, cut small portion of dough, give it a bowl like shape, add stuffing and close it's opening through rotating and pressing through fingers. Make it a smooth ball, spread some flour on rolling board and then flatten the dough by rolling pin into circular parathas.

Heat the tawa and place raw parathas on it. Cook on both side with desi ghee until you see beautiful brown spots on both sides.

Garnish it with butter and serve with your favourite chutney, raita or achar and even some fresh fruits if you want. :)
