Being adventurous as well as somewhat cheap actually leads to some interesting results. This noodle stir fry is a testament to that.
Cooking Instructions

In a separate pot boil the egg noodles boiling water for 7 minutes. Once finished, drain in a colander whilst pouring cold water through. Set aside and cover.

In a wok on high, melt the margarine and brown your white meat.

Once browned, add the red curry paste, seasoning salt and half of the soy sauce, hoisin sauce and oyster sauce.

Fry for about 2 minutes

Add your stir fry vegetables and cook until there's just enough space to place your egg noodles you set aside.

Place the egg noodles in the wok then cook and mix for about 5 minutes.

Add the rest of the soy sauce, hoisin Sauce and oyster sauce. Cook for 2 minutes more and adjust the taste if you so need with soy sauce or seasoning salt.

Place in a pyrex dish once done and serve hot.

A healthy-ish spin on the chow mein we all love from asian restaurants. Some of the noodles are just replaced with ALL the vegetables. This is best prepared in a wok, but if you cook with a electric stove a large sautee pan with high sides will do. I use dried noodles called "Wok Nudeln" here in Germany. I never saw the equivalent in the states, but then again I wasn't looking. It will work with any asian egg noodle, however. You will just skip adding water to the pan when cooking the noodles. If you're lucky enough to have access to fresh noodles, you don't need to do anything extra. If you're using the longer noodles that come kinda like blocks you should blanch them just until they separate. Remove from heat and toss with sesame oil. Garnish with scallion greens and dried chili peppers. Goes great with stir fry. Jon Valdez -

I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! So nice and a good way to get rid of those veggies that need to be used. Ground beef instead of chicken pieces works well too. Enjoy! 😀 ChrisO505 -

You can make this recipe with chicken also, but in that case use chicken stock instead of vegetable stock. If you don't get fresh stock use stock cubes. But fresh ingredients make the dish better. Oyster sauce is the main sauce used to make Chow Mein, but I like to add a little soy sauce too. You can skip adding it if you want. You can also use any other vegetables of your choice. Broccoli & bell peppers would make the dish colourful. Make sure you don't cook the noodles or the vegetables too much in the initial stage, then everything will be overcooked in the end. Be careful while adding salt, the sauces are salty. This might not be the traditional Chow Mein Recipe. I don't believe oregano is used 😉 So if you don't want to then skip it. Pen Friend -
