Ingredients

-1hr
makes 2 dozen
  1. 4 cupssifted plain flour
  2. 1 Tbsbutter or rama
  3. 1 tspsugar
  4. 1(1/2) or 2 cups boiling hot water
  5. 1 Tbsoil(for kneading)
  6. Extra flour for rolling
  7. Cooking roti
  8. 2 Tbsbutter
  9. 4 Tbsoil
  10. Thawa or non-stick pan

Cooking Instructions

    Sift in the flour into a big bowl, add the sugar and salt.Cube the 1 Tbs butter and add it to the flour.

    Boil the water and make a well in the center of the flour. Pour in half of the water, mix through with a spoon then add more hot water till it forms crumbs.

    Using your hands, knead the dough till soft.Add the 1Tbs of oil onto your hands and knead again.Make golf size balls.

    Place the thawa on med heat.Melt the butter with the oil for the cooking of the roti.Flatten 1 ball at a time and roll out onto a floured surface sprinkling little flour on each side to prevent sticking.Roll till you have round side plate size circle.

    Once the thawa is hot, place 1 roti at a time. Let it bubble then flip over. Sprinkle 1/4 tsp of the butter mixture and spread it.Let it bubble then flip over,sprinkle butter mixture then wait for it to bubble then brown the other side. Take it off and place it on a plate. Once all rotis are done, place them into a container, let it cool then seal to prevent it from hardening.

    Enjoy with curries, tikka or on it's own.
