This is a very popular street food in South Asian countries. It is very spongy, soft, very yummy. Can be enjoyed in breakfast, lunch or dinner. This is my first try, came out not so bad!

Separate the egg yolk and white. Whisk the egg white by an electric beater or hand whisk until stiff and fluffy. Add salt and whisk again.In a separate bowl whisk the egg yolk after adding salt till it is creamy and whitish.

Add some of the onion, tomato and herbs into the egg yolk. Put a little oil in a fry pan and pour the yolk. The heat should be very low. After a few seconds cover the pan and cook. When the sides becomes a bit crispy, carefully lift the sides and push in 1tsp of butter. This way push on 3or4 sides and cover and cook. After 4/5 minutes add the egg whites and level and cover.

After a few seconds sprinkle the remaning flavouring veggeis and herbs. Again cover and cook. Heat should be very low. If the bottom is already browned and the top is no longer raw then carefully fold the omlette. Press and cook for a few minutes more covered so that the white is cooked properly.

Now take out the omlette very carefully into a plate. Voila your super delicious crispy yet super fluffy soft giant omlette is ready! Try it at breakfast, lunch or dinner with bread or rice!
