Cathedral window

This is a very popular dessert item of South East Asia, especially in Philippines. They use coconut milk and pineapple juice. But I have improvised it with evaporated milk, cream and condensed milk. Usually many colors of jello is used, but considering green and red theme of Christmas, I have used only green and red color jello. It is called Cathedral Window because it looks beautiful like multicolored glass windows of the cathedral.

First mix each pack of jello powder in 1cup of hot water stirring well till the granules dissolve. Now pour the mix in reactangular plastc container to solidify. Leave them in the refrigerator to become solid. After they have become firm cut them into pieces.

Mix evaporated milk, condensed milk, cream in a pan and mix well by whisking. Dissolve the Agar Agar powder with a little water in a separate bowl and then mix wth the milk mixture. Heat the pan with milk mixture in medium heat stirring constantly so that no lump is formed. When fully boiled, remove from heat and let it cool.

Take a medium sized transparent glass dish. Arrange the cut pieces of green and red jello in any manner. I have cut the jello with cookie cutter and arranged systematically. Then pour over the milk mixture which should be lukewarm, not hot or cold. Hot liquid will melt the jello. And if the milk is cold it will solidify even before pouring.So the temperature is important. Milk should just submerge the jello. Now wait for it to solidify.

When the milk mixture condenses into a soft layer but not to firm, arrange the 2nd layer of jello pieces and pour over the milk mixture over it. Let it harden. Put it in the fridge to be set and cooled. I made a miscalculation of the size of the dish, my dish was 2/3rd filled and I had no milk mixture. So I quickly boiled 2 cups of water with 3tbsp of sugar and 3tsp of Agar Agar and poured it over another layer of jello after cooling sufficiently. This step is unnecessary if your dish is full.

Keep the dish in the fridge for at least two hours. Before serving mould out the dessert by putting it upside down on a platter. The guests will serve themselves by cutting pieces of the pudding. If you use cube cut jello pieces you don't need to mould out. It can be served by cutting slices from the dish as such.
