Loaded Mughlai Paratha

Step 1 – Preparing the paratha dough
I used a kitchen mixer since I have one which doesn’t get used that often. Hand kneading works too. Add flour, salt, sugar and baking soda and mix well. Slowly add cooking oil (your preference). Then add the ghee and keep mixing. Then slowly add room temperature water. I used approximately 2 cups of water. Once dough is formed take it out and make even portions. I got 6 portions. - 2
Step 2 – Making the egg mix
Crack the eggs and add thinly sliced red onions, chopped coriander, chopped green chilli, salt, pepper. Mix well. Let’s go and roll out the parathas and heat the oil for frying. I am not the best roller..lol. As long as it takes a square shape, I am good. - 3
Step 3 – Heat oil for frying on med heat.

Step 4 – Roll the parathas
First grease the surface with oil/spray. Roll the parathas into a nice decent square shape. Large enough to hold the filling. I roll it quite thin. - 5
Step 5 – Layer the fillings
I used what I had at home and those are my favorite fillings for Mughlai paratha- cooked ground beef, sauteed spinach n mushrooms and cheese. You can use what you like. Just be careful not to use too much wet stuff. The egg mix is already wet and spinach has some water too. We don’t want the paratha too fall apart or to leak out. I put the egg mix first then cheese, spinach, mushrooms, ground beef and then some more egg mix and cheese on top. - 6
Step 6 – Folding the paratha
Fold it a manner where the paratha forms a nice square. - 7
Step 7 – Frying
By this time the oil should be hot enough. Too hot will burn the paratha on the outside. The good thing is almost everything is cooked inside the paratha. So it just needs to be fried till it forms a nice crust and the egg gets cooked inside, usually 3-4 mins/side. So medium heat is just perfect. Fry till its done and Enjoy !!
