The best part about this meal is you don't have to cook. Yes! You head it right.
All you have to do is chopping and boiling some veggies, prepare the dressing and boom! You are good to go!
It's completely okay if you want to add veggies as per your choice. Like you can add paneer, chickpeas, cucumber, tomato etc, anything that suits your taste. You can swap bread with whole wheat/ multi grain chapati. Just be mindful of the proportion. I eat this once a week for my lunch and believe me it's quite filling and satiating.
