#india ....One pot meals are the best meal options when it comes to quick fix your lunch or dinner. Easy to prepare, loaded with nutrients and you don't have to compromise with taste too!

The best part about this meal is you don't have to cook. Yes! You head it right.
All you have to do is chopping and boiling some veggies, prepare the dressing and boom! You are good to go!

It's completely okay if you want to add veggies as per your choice. Like you can add paneer, chickpeas, cucumber, tomato etc, anything that suits your taste. You can swap bread with whole wheat/ multi grain chapati. Just be mindful of the proportion. I eat this once a week for my lunch and believe me it's quite filling and satiating.

Ingredients

1 serving
  1. For dressing :
  2. 1 tbsp honey
  3. 1 tbspvirgin olive oil
  4. 1 tsplemon
  5. To tasteSalt & pepper
  6. For salad :
  7. 1 cupRajma beans, boiled
  8. 1Bell pepper, chopped
  9. 1/2 capCabbage (white+purple), chopped
  10. 2/3 tbspGreen Beans, boiled & chopped
  11. 2 tbspPeas, boiled
  12. 1Onion, chopped
  13. 1Bread slice, toasted and chopped

Steps

  1. 1

    Prepare dressing by adding all ingredients in bowl, mix well and keep aside.

  2. 2

    Next add all the veggies and pour dressing over it. Mix it well.

    Lastly add toasted bread slice and enjoy it.
