Ingredients

  1. 1 tbspeach of finely sliced cashews, almonds, walnuts, golden raisins, black raisins, candied fruits
  2. 2 tbspprunes (dried plums)
  3. 3/4 cupfresh orange juice or tetra pack mix fruit juice or grape juice
  4. 1 pincheach nutmeg, cinnamon, dry ginger powder, 1/2 cloves powder
  5. 1/4 tspsalt
  6. 1 cuprefined flour
  7. 2 tbspcoco powder
  8. 1/2 cupfine sugar
  9. 1/2oil or butter
  10. 3 tbspMilk
  11. 1/2 tspbaking powder and 1/4 tsp baking soda

    Soak dried fruits and nuts in a fresh fruit juice or canned juice for one hour.

  2. 2

    Pre-heat Kadhai (big pan) with 2 cups of common salt. Place a ring or a stand in the Kadhai for keeping the cake tin. Ensure that cake tin bottom is not touching the salt. Cover and pre-heat for 10 minutes.

    Sift together flour, cocoa powder, baking powder, clove powder, nutmeg powder, dry ginger powder and cinnamon powder and salt.

    Add fine sugar, oil or melted butter add soaked dried fruits in flour mixture mix nicely.

    Line baking mould with butter paper and pour in the batter.

    Place this tin in a preheated Kadhai and bake the cake batter for 40 - 45 minutes.

    Other options is bake it in a preheated oven 180 degrees for 35 to 40 minutes.

    Insert knife to check if it comes out clean. If knife is wet then bake it again for five min.

  9. 9

    If yes, remove the cake tin and keep it on wire rack.

  10. 10

    Remove cake from the cake tin after 15 min.

    Slice the cake when it is completely cool. Yummy cake is ready.
