Ingredients

  1. 2kgBeef bong....
  2. 1/2 kgBones
  3. 1 tbspginger garlic paste
  4. red chillies 3 tbsp more if you like
  5. 1 tspturmeric
  6. 2 tsp or to tastesalt
  7. 2 tbspFennel seeds(saunf)
  8. 2 pieces or ground 1 tbspdry ginger
  9. 1 tbspCorriander seeds(dhania)
  10. 1 tbspwhite cumin(safaid zeera)
  11. 1 tsp or lessblack cumin (kala zeera)
  12. 1 /1/2 tbspBlack pepper corns(kalee mirch sabat)
  13. 5-6Green cardamom(haree elaichee)
  14. 4 only seedsBlack cardamom(Kalee or baree elaichee)
  15. 2Bay leaves
  16. 3-4Pipli
  17. 2-3 piecesstar anise(badyan ka phool)
  18. 1/2 tbspcloves
  19. 1/2 tspnutmeg(jaifal)
  20. 1/2 tspmace(javetri)
  21. 2 big piecescinnamon
  22. 3-4 whole or ground 1 tbspDeigee mirch
  23. 1 tsp (optional)paprika
  24. 1/2 tspcitric acid
  25. 1 tspblack salt
  26. 1 cup or more oil if you like taree on top
  27. 1 1/2 cup+2tbsp oilRoasted whole wheat flour
  28. 5-6tez paat in addition to the one in nihari masala

Steps

  1. 1

    Grind all the whole masala into a fine powder. Make yakhni of bones with little salt, turmeric and red chillies, remove bones when it is done.

    Take a big pan and add oil and meat. Put gg paste, tez paat and saute for a minute or two. Now add ground nihari masala and saute for 4 to 5 min.

    Add yakhni of bones and large quantity of water in the pan.

  4. 4

    When it starts to boil then slow the flame and leave it for 2 to 3 hrs until the meat is tender or pressure cook it for approx 30 min on medium heat.
