Ingredients

Serves 4 servings

3leeks
6large carrots
1large onion
5garlic cloves
3 1/3 lbsbeef for pot-au-feu (about 1.5 kg)
1marrow bone
7whole cloves
Sea salt
Black pepper

Steps

Peel and wash the carrots and leeks. Peel the onion and garlic.

Stick the cloves into the onion.

Soak the meat in cold salted water, bring to a boil, skim off any foam, then cook for 1 hour 30 minutes.

Add the vegetables, cook for another hour, and season with pepper.
