This recipe is very flexible. You can add black fungus, tomatoes, tofu, capsicum, carrot or anything else you like on top of the zucchini. If you want to go vegan, just add tofu and omit the chicken.

Ingredients

  1. For the chicken
  2. 1 poundchicken breast, cut bite size
  3. 1 tablespooncornflour
  4. 1 tablespoonlow sodium soy sauce
  5. For the stir fry sauce
  6. 1/4 cuplow sodium soya sauce
  7. 1 cupwater/chicken broth
  8. 1 tablespooncorn flour
  9. 2 tablespoonmirin
  10. 1 tablespoonsugar
  11. 2 teaspoonsesame oil
  12. For the stir fry
  13. 1 tablespoonminced garlic
  14. 1 tablespoonminced ginger
  15. Vegetable:
  16. 1big zucchini/2 cups, cut 1/4 inch thick half moon
  17. Black fungus/other mushroom
  18. Capsicum/tomatoes/carrots etc
  19. Egg tofu/tofu
  20. For garnish: (optional)
  21. Sesame seeds and scallion

Cooking Instructions

    Marinate bite sized chicken with 1 tablespoon of corn flour, 1 tablespoon of soya sauce for about 30 mins - 1 hour

    In a bowl, mix all ingredients for the sauce (except the cornflour)

    Prepare the veggies (wash, cut)

  4. 4

    Heat up about 1 tablespoon of canola oil in the pan, add minced garlic and ginger. Stir fry until fragrant. Add the marinated chicken, cook until the chicken is no longer pink

  5. 5

    Add in the zucchini, mushroom, carrot, tomatoes etc, cook for few minutes until all veggies are half tender. Add the sauce mixture.

    In another bowl, mix 1 tablespoon cornflour with a bit of water. Pour this mixture at almost the end of cooking, cook a few minutes till the sauce thicken. Correct the taste if needed. Add sesame seeds and scallion if desired. Served warm with rice 😋
