Ingredients

  1. 1.5 cupsFlattened rice or thick poha
  2. 1onion chopped finely
  3. 1/2 tspgrated ginger
  4. 1small potato boiled and cubed
  5. 1 tbspfinely chopped carrots
  6. 1 tspfinely chopped beans
  7. 1cauliflower floret chopped into small pieces
  8. 2green chillies chopped
  9. 4cashewnuts fried
  10. 1 tbsppeanuts fried
  11. 1 tbspraisins
  12. 1 tspchopped coconut
  13. To tastesalt
  14. 1 tspsugar
  15. 1 tbsprefined oil
  16. 1 tbspghee
  17. 2bay leaves
  18. 1 tbspchopped coriander
  19. 1/4 th tsp cumin and mustard seeds

Steps

  1. 1

    Chopped onion finely.Steam or boil potatoes and finely chopped carrot and beans.These should not lose their crunchiness.Heat oil and fry in low flame till chopped cauliflower golden brown.Fry the cashew and peanuts.Sprinkle cumin and mustard seeds.When they crackle,fry the chopped onion and grated ginger.Add the steamed vegetables and toss.Also add chopped coconut and raisins.Sprinkle garam masala and toss.Boiled peas can be added.

    Wash poha and strain water completely.Spread the poha over the frying vegetables and add 2 bay leaves.Sprinkle salt and sugar to taste.Also add chopped green chillies.Toss carefully so that poha doesn't get mushy.Sprinkle chopped coriander leaves and serve hot with a cup of tea.
