These hearty skillet cakes are prefect as a meal or snack. You can top them with whatever your taste buds are calling for, pb&j, butter, fruit, cream cheese, lunchmeat and cheese. Enjoy!

Ingredients

1 skillet cake
  1. 1/4 cupunbleached all-purpose flour
  2. 1/4 cupquick cooking oats
  3. 1 tspbrown sugar
  4. 1/4 tspbaking powder
  5. 1/8 tspbaking soda
  6. 1/8 tspsalt
  7. 1egg white
  8. 1/4 cup"milk" of choice
  9. Peanut Butter and Jelly

Cooking Instructions

    Stir together all dry ingredients.

    Add egg white and stir with fork until mixture pulls together.

  3. 3

    Add 1/4 cup "milk" of choice and mix well without over mixing. This is a hearty/dense cake and too much mixing will make it tough.

    Heat lightly oiled skillet on low-medium heat for a couple minutes. This allows time for the oats to soften up. Pour mixture into pan all at once and do not adjust or attempt to spread evenly. It'll do its thing.

    Wait to flip until bubbly throughout.

  6. 6

    Cook an additional minute or two on other side.

  7. 7

    Top with peanut butter and jelly and enjoy.
