Ingredients

  1. Peanut Butter Cookies
  2. 1 cupunsalted butter
  3. 1 cupgranulated sugar
  4. 1 cupbrown sugar
  5. 2eggs
  6. 2 1/2 cupall-purpose flour
  7. 1 tspbaking powder
  8. 1 1/2 tspbaking soda
  9. 1/2 tspsalt
  10. 1 1/4 cupcreamy or chunky peanut butter your choice
  11. Grape Ice Cream
  12. 2 3/4 cupgranulated sugar
  13. 2 cupwhipping cream
  14. 1 quarthalf & half
  15. 1/2 cuplemon juice
  16. 2 cupgrape juice

Cooking Instructions

    Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.

    In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.

    Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375°F oven for about 10 minutes or until golden brown.

    For ice cream: Combine sugar, whipping cream and Half & Half in a large mixing bowl; beat at medium speed with electric mixer 1 minute, or until sugar dissolves.

    Add juice and beat until well incorporated. Pour into freezer container. Freeze until firm.

    Once cookies are cool and ice cream is set, place a scoop of ice cream on a cookie, top with grape jelly if desired, and top with another cookie. Repeat process as many times as you wish. Enjoy!
