Carrot Kheer /Carrot Pudding with Jaggery

Heat a pan, add 1/2 cup jaggery or as per taste and water and cook on medium flame till all the jaggery is melted. Keep aside.

In another pan, add ghee, and grated carrots and cook till carrots are soft.

Now add cardamom powder and milk and stir. Cook on medium flame and keep stirring for about 10 minutes.

Add melted jaggery and mix. Cook for another 8-10 minutes till everything is mixed properly. Add nuts in last and serve hot or chilled as per taste.
