Ingredients

3 servings
  • 360 gEgg noodles sufficient for 3 persons, to boil with a pinch
  • 450 gchicken thigh boneless or breast, cut into 2cm square size
  • 1/2 tspbaking soda to tenderize the meat
  • 3 cupsRice Bran oil
  • 3 tbsRice Bran oil
  • To marinade the chicken pieces with a mixture of:
  • 2 tbsSalty/ Thin Soy sauce (2 Swans)
  • 1 tbsIndonesian ABC Sweet Soya sauce,
  • 1 tbsChinese ShaoXing Cooking Wine or dry Sherry
  • 2 tspChinese Five Spice powder
  • 1 pinchblack pepper crushed
  • 1 cupchicken stock with 2 cubes chicken stock
  • Mix all together with the chicken pieces, cover and set aside
  • 1red & green capsicum remove the seeds and cut into Julianne
  • 4 ozBamboo shoots sliced
  • 2 ozShiitaki mushrooms, sliced thinly
  • 4 ozbaby Pak Choy, wash very well, cut at the bottom, then
  • cut into half or quarter lengthwise
  • 2Green onions diced (reserve 1 for garnishing)
  • 4 ozBean sprouts
  • (or substitute with 2 cups Shanghai Cabbage shredded)
  • 1carrot fine sliced match-sticks Julianne (1 cup)
  • 4 ClovesGarlic, smashed & chopped very finely
  • 1" fresh Ginger,smashed, cut thinly to have 1/2 tbs Ginger paste
  • 2 inchesGARNISH: Green/Spring onion cut into
  • 3 cupsRice Bran Oil (Alfa one brand) for fry
  • For SOY SAUCE mixture:
  • 2 tbsThai Soy sauce
  • 1 TbsSweet Soy sauce
  • 2 TbsOyster sauce
  • 1 tbsSiracha chili sauce (mild hot)
  • 1 tbscornflour dissolved in 1tbs water
  • Salt n Black Pepper crushed
  • 1 tbsSesame oil (add the very last)

Steps

    Heat 1.5 lt water in a pot, till it comes to a boil, add salt and the noodle and cook for 2-3 minutes. Let it cook 'al dente' as it will be re cook again later on with the vegetables. Drain and wash it with cold warer under the tap to stop the cooking. Add 1 tsp Rice Bran oil and mix it well to coat the boil ed noodles so that they don't stick. Set it aside.

    In a mixing bowl put the chicken pieces, add for marinade: 1 tbs Salty/Thin Soya sauce (2 Swans), Sweet ABC Soy sauce, rice wine or Shaoxing wine, Chinese 5-spice powder, tsp baking soda to tenderize the chicken meat and keep it moist, add a pinch of black pepper. Mix all until chicken are well coated. Cover with the Gladwrap plastic, then put in the fridge.

    Prepare the vegetables. Smashed the garlic then chop them finely, chopped finely the ginger, slice the bamboo shoots, slice the mushrooms, cut green vege Pak Choy, Red Capsicum, and Green onion, slice the carrots, cabbage.

    In a wok put 1.5 tbs oil, add the marinated chicken and stir fry until golden brown, no more than 3 minutes. Remove from the wok transfer into a big plate.

    Prepare the Saus* : in a small bowl put Thai Soy Sauce, ABC Sweet Soy sauce, Oyster Sauce, Sirachi Chili Sauce, salt & Black Pepper, Chicken Stock 1 cup, Sesame Oil and Cornflour mixture. Mix all together.

    Heat 2 tbs oil into the wok,add garlic,Ginger&Capsicum and cook 45 seconds,then add the Mushrooms, Carrots,Bamboo shoots,the baby Pak Choy,Cabbage saute' for 1' then add the noodles&pour over the sauce *(steps 5).Mix well, keeping stirring the noodles until are evenly cooked&keep stirring until the sauce coated the Noodles about 2', until no sauce left as the the Noodle has absorb all.Then add the cooked Chicken, Bean sprouts & the green onion and toss it about 40" to 1 minute.Turn off the heat.

    Transfer Noodles & the cooked chicken to a large serving dish. Sprinkle on top with a dash of the Sesame oil, give a mix, garnish with the green/spring onion on top central. Serve hot with Sambal Oelek

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking. Cooking is just fun and a relaxing moment to enjoy food around the table with my family 😚 🤗
