Ingredients

10-15 servings
  • Chili peppers
  • Garlic
  • Shallots
  • Galangal
  • Lemongrass
  • Lime
  • Ginger
  • Pea eggplant
  • Peanuts
  • Rice vermicelli noodles
  • Wild betel leaves or any leafy greens suitable for wrapping herbs
  • Green banana
  • Pork rinds
  • For the sauce:
  • 1 bottlefermented fish sauce (pla ra)
  • 2.2 lbsbrown sugar (1 kg)
  • Tamarind paste, to taste

Steps

    Combine the fermented fish sauce and brown sugar in a pot and heat over low heat.

    Stir until the sugar dissolves, then add tamarind paste to taste.

    Simmer until the sauce thickens.

    Taste and adjust so the sauce is tangy, sweet, and salty.

  5. 5

    Let the sauce cool, then serve.

    To eat, use wild betel leaves to wrap the prepared fillings, then drizzle with the sauce for a tangy, sweet, salty, and slightly astringent flavor.

    This makes a delicious snack or appetizer and can help with digestion and balancing the body's elements.
