We created this recipe as a way of having 1/2 days off meat a week! Don’t get me wrong we love eating/ cooking with meat but as 2020 we thought we’d do our bit and create tasty 😋 meat free recipes! My 8 year old boy loves this! 😍 Quick and easy also . Enjoy!
15 minute meat free loaded nachos

Cut tortillas into triangles, rub in olive oil and sprinkle with half the paprika, season with salt/pepper cook in hot oven 200 degrees for 5:7 mins.

Fry off mince with soy,chilli flakes cumin and the rest of the paprika.. once browned add the drained kidney beans and tomato paste. Add hot water 200ml and fry for 5 minutes.

Dice the tomatoes, spring onions and coriander together... this is your salsa! Mix with olive oil/ salt/ pepper.

Bring everything together.. add cheese if you prefer! Loaded healthier nachos which my boy loves helping to cook and eat of course 😍Enjoy!
