Wash the pork belly and slice it into thin, bite-sized pieces. Let drain. Prepare the marinade: wash the lemongrass, shallots, garlic, ginger, and green onions. Finely chop or blend them for the marinade.

In a bowl, combine 2 tablespoons sugar, 2 tablespoons oyster sauce, 1 tablespoon sesame oil, 1 tablespoon fish sauce, 1 tablespoon baking soda, 1/2 tablespoon black pepper, and 1/2 tablespoon bouillon powder. Add the chopped aromatics and mix with the pork to marinate.

Marinate the pork for 1 hour, then grill until cooked and slightly charred.

Wash and thinly slice the kohlrabi and carrot. Toss with 2 tablespoons sugar, 1/2 tablespoon seasoning salt, 1 tablespoon lime juice, and 1/2 tablespoon minced garlic. For the dipping sauce: mix 2 cups hot water (500 ml), 3 tablespoons sugar, 8 tablespoons fish sauce, 1 tablespoon vinegar, and 2 tablespoons lime juice. Adjust to taste.
