Ingredients

  2. 1/2 bowlRefined flour
  3. 1/2 bowlSemolina(sooji)
  4. 1 tbspDesi ghee
  5. as neededOil for frying
  6. 1 tbspCoriander mint chutney
  7. 1 tbspTamarind chutney
  8. as neededChilled curd (whisked curd with sugar added to it)
  9. 1 tbspChopped onion
  10. 1 tbspChopped tomato
  11. 1 tbspPomegranate seeds
  12. 1/4 tsproasted cumin powder
  13. 1/4 tspchaat masala
  14. to tasteSalt

Cooking Instructions

    In a plate add 1/2 bowl refined flour, 1/2 bowl suji, 1 tsp salt and 1 tbsp clarified butter. Knead the ingredients to form a soft dough.
    After kneading, cover it with a muslin cloth and leave for 10 mins so that the suji can soak in water and the dough gets firmer.

    Divide the dough into 4 equal halves to flatten it into papdi’s.
    Cut the flattened dough into equal sizes (you can use a cookie cutter or even a small bowl for this).
    Pierce the papdi’s which we’ve just made with the help of a fork.

    Heat oil in a pan for frying.
    Add papdi to the heated oil and let it fry on a medium-low flame until it turns golden brown.

    Assembling:
    Place the papdi’s on a dish.
    Top the papdi with chilled curd.
    Drizzle coriander mint chutney and tamarind chutney over it.
    Add roasted cumin seed powder, chaat masala & salt to it.
    Garnish it with chopped onion, chopped tomato, chips and sprinkle pomegranate over it.
    Crispy papdi chaat is ready to be relished.
