Ingredients

3 persons
  • 300 gChinese dried Egg noodles (thin one) or
  • 2pkt Spicy Thai Instant Egg noodle
  • 450 gPork mince
  • 1 tspSalt & grinded Black Pepper
  • 1 1/4 cupsor 315ml water
  • 4 TbsRice Bran oil for stir-fry the meat
  • 2 tspSesame oil
  • 1big Red onion, chopped finely
  • 2garlic cloves, smashed
  • 2 cupsShanghai Cabbage(Wombat) or some Broccoli flowerettes
  • 1 cupCarrots cut into matchsticks or
  • 1/2Red Capsicums, slice thinly in tiny pieces
  • 1 stalkCelery, sliced finely
  • 1. 5 Tbs Tomato Sauce
  • Srirarcha hot chilli Sauce (Vietnamnese'x or Thai's brand)
  • COOKING SAUCE:
  • 1 tbsIndonesian sweet ABC Soy Sauce
  • 1 tbsSavoury Thin Soy sauce
  • 1 tbsHoisin sauce
  • 1 tbsMirin or Sweet Rice Wine for cooking only
  • 2fresh Red chili de seeded, chopped finely
  • leafGarnished: some Parsley
  • Cold drink Lemon, Lime & Bitters of Bundaberg
  • Indonesian Green Tea

Steps

    SAUCE: in a small bowl put the Indonesian ABC Sweet Soy Sauce, Hoisin Sauce, and Mirin, shallots. Set aside. In a wok put 2 tbs oil over medium heat add onions for 1 1/2' then add garlic & mince pork and spread stir-fry and cook breaking it up with the wooden spoon until the meat change colour from pink to light brown, then add salt, black pepper and the sauce and cook for 2'-3' turn and mix well, cook until well caramelized.Turn the heat on high. When is the meat is golden brown then turn off.

    To soften the noodles: in a pot put half full with water and place 2 packets of Spicy Thai noodles, the spicy which is in a small plastic bag & the chicken stocks. Boil for about 3' until just cook al dente (dont overcook). Remove, drain on a colander.

    In a wok put 3 tbs oil, add onions, garlic then Shanghai cabbage, add red/green capsicums, carrots, celery, tomatoes and mix. Add 1 tbs thin Savoury Soya sauce and toss for 3'-4'.

    Then put back the half cooked noodles and the cooked Pork, season to taste, lastly add 2 tsp Sesame oil and toss well.

    Transfer to individual plates: put parsley leaf on top as garnish. To serve with Srirarcha hot chili sauce and with a drink, a glass of cold Lemon, Lime & Bitters of Bundaberg or a cup of Indonesian Green tea with cubed iced. 😙🍝🍷🍻🍸

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
