Steps

Take a deep pan
Add 2 cups of water
Let it boil
Add soaked rice and salt and let the rice cook.
Make sure they are done but not mushy.
Drain excess water if any. - 2
Now Heat another flat pan,add ghee and add mustard seeds. When they splutter add curry leaves, cloves, bay leaf. When they are aromatic add sliced onions and sauté.

Also add chopped green chilli and sauté
Now add grated beetroot mix gently and cover to let it cook for 5 minutes. Now add grated coconut and stir. - 4
Once beetroot is softened a bit add cooked rice to it and very gently mix everything so as to avoid breaking of rice.

Add lemon juice and little more melted ghee on the top for extra flavor before serving.

Serve with any raita
