Feel and wash ur Irish potatoes and set aside to drain.

Put ur vegetable oil on fire for frying then sprinkle a pinch of salt on ur potatoes when the oil is hot u add ur potatoes and allow it to fry.

Then you cut all the vegetables and set aside.

In a bowl break ur eggs and whisk gently.

In a clean pan add a little oil when it's hot U add ur scotch bonnet and a little onion and stir fry a little, then add your egg and leave it 1min then u scramble it gently as u add ur seasoning and spices then ur vegetables and stir properly.

When ur Irish potatoes are done u strain it to avoid excessive oil and dish out with your scrambled egg.
