Ingredients

3 to 5 person
  1. 2 CupsMaida (All-purpose flour) sifted
  2. ½ tsp or to tasteNamak (Salt)
  3. 3 tbsGhee
  4. 1 Cup or as requiredPani (Water) chilled
  5. 1 tbsOil
  6. 1 tspZeera (Cumin seeds)
  7. 1/2 tspRai dana (Mustard seeds)
  8. 2-3Green chilli (Green chilli) chopped
  9. 2 mediumAalo (Potatoes) boiled & mashed
  10. 1 tspAdrak lehsan paste (Ginger garlic paste)
  11. Lal mirch powder (Red chilli powder) 1 tsp or to taste
  12. Namak (Salt) 1 tsp or to taste-Dhania powder (Coriander powder) 2 tsp
  13. 1/2 tspHaldee powder (Turmeric powder)
  14. Pyaz (Onion) chopped 1 medium
  15. 2 tbsBesan (Gram flour)
  16. Cooking oil for fry.

Steps

  1. 1

    In bowl,add all-purpose flour,salt,ghee and mix well.Gradually add chilled water and knead until dough is formed

    Cover with wet cloth and let it rest for 20 minutes. In frying pan,add oil,cumin,mustard seeds and mix

    Add green chilies and mix

  4. 4

    Add mashed potatoes and mix well

  5. 5

    Add ginger garlic paste,red chilli powder,salt,coriander powder,turmeric powder and onion,mix well and cook for 5 minutes

  6. 6

    Add gram flour and mix well.

  7. 7

    Knead dough again and cut into pieces.

  8. 8

    Take a small dough and make a balls

  9. 9

    On working surface,apply oil and flattened the balls with the help of the fingers

  10. 10

    Take a potato filling and make a balls

  11. 11

    Now place potato ball in flatten dough,warp and seal the edges and make a ball again

  12. 12

    Cover the balls with wet cloth for 5 minutes

  13. 13

    Grease hands with oil,take a stuffed ball and flattened with the help of the palms

  14. 14

    In wok,heat cooking oil and fry on low flame until golden brown
