Water spinach is really expensive here—almost $7 for a small bunch—but since my daughter loves this dish, I bought some and stir-fried it with garlic.

Pick the tender stems and leaves from the water spinach and wash thoroughly. Peel the garlic and slice thinly. Heat 2 tablespoons (about 30 ml) of oil in a pan and sauté the garlic until fragrant.

When the garlic turns golden, add the water spinach and stir-fry over high heat to keep the greens vibrant. Season to taste. Once the water spinach is tender, turn off the heat. Squeeze a little lime juice and add sliced chili, then toss everything together.
