Maqluba from Jordan, means “upside down” because of the way it’s cooked !!
It’s an Arabic dish and is all time favourite recipe specially treated for Ramadan and Eids.
There is a variety of Mandi, Maqluba and Kabsa, according to different countries of Gulf..
Today my recipe is a Persian version of Maqluba
It’s more like our Pakistani Pulao !! So you can enjoy it with slightly different aroma and enjoy your meat treats !!
To cook the mutton, use water as required, as every meat type tenders differently..
Same goes for rice.. mine were some simple rice and I used 5 3/4 glass water accordingly.

Ingredients

1 hr 20 mins
9 person
  • 1 1/2 kgmutton
  • 1 cupoil
  • 3bay leaves
  • 1medium onion (roughly cut)
  • 1/2 headgarlic
  • 1 tbspcumin, cloves, cinnamon (mix)
  • 1 tbspsalt
  • Water as required
  • 5 glassrice
  • 1 tbspcumin powder
  • 1 tbspcoriander powder
  • 2 tbspblack pepper powder
  • 2 tbspallspice (nutmeg, cardamom, cinnamon, cloves)
  • to tasteSalt
  • 1/2 tspturmeric powder
  • Mutton stock to cook rice
  • 1/2 cupoil
  • Vegetables:
  • 1carrot thinly sliced
  • 2capsicums cut into thick chunks
  • 2potatoes cut into thick chunks
  • 6-7green chillies
  • 3-4garlic cloves
  • For tomato soup:
  • 8-10tomatoes
  • 2green chillies
  • 1 tspsalt
  • 2-3 glasswater
  • 1/2 tspblack pepper powder

Steps

    In a wok and oil, mutton and all the spices. Mix well.

    Add onion, cover and cook on medium heat for 10 mins.

    Now add water to make stock and cook on medium low flame till the mutton is tender. Also add the garlic.

    Now in another wok, add oil, mutton and vegetables in layers.

    Now in a big mixing bowl add rice and all the spices. Mix with a spatula with light hands.

    Add the rice in layer over the vegetables. Add the mutton stock according to your rice (like in pulao) and let it cook on medium low flame till bubbles appear and water is absorbed.

    Meanwhile blend together the ingredients for tomato soup and pour into the sauce pan. Cook till the soup is thick.

    Now cover the rice and put the flame to lowest. Cook for 10 mins.

    Now dish out and serve with tomato soup.
