Ingredients

  1. 2 1/2 cupsall-purpose flour
  2. 2 teaspoonsbaking powder
  3. 1 teaspoonbaking soda
  4. 1 teaspoonsalt
  5. 1/2 teaspooncinnamon
  6. 3/4 cupbrown sugar
  7. 1/2 cupgranulated sugar
  8. 226 gbutter
  9. 1 1/4 cuppeanut butter
  10. 2large eggs
  11. 1 1/2 teaspoonsvanilla extract

Steps

  1. 1

    Preheat oven to 190 degrees Celsius. Prepare a large baking sheet with parchment paper, set aside.

  2. 2

    In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  3. 3

    In bowl of stand mixer fitted with paddle attachment (or large bowl using hand mixer) beat together the butter, peanut butter, and both sugars until fluffy and pale in color, about 2-3 minutes.

    Beat in the eggs and vanilla until well incorporated.

  5. 5

    With the mixer running on low speed, add the dry ingredients to the wet ingredients, mix until combined.

  6. 6

    Drop the dough by Tablespoonfuls onto prepared baking sheet, and make a cross with a fork like this:

    Bake in preheated oven for 8-10 minutes until lightly golden on the bottom and around the edges.
